Asian-Inspired Sirloin Steaks on Cold Soba

Serves 6-8

Ingredients:

2 lbs. Windy N Ranch Sirloin Steaks
1/2 cup soy sauce
1/4 cup toasted sesame oil
½ cup rice wine vinegar
2 Tbsp. each lime juice and orange juice
1 Tbsp. peeled, grated ginger
1-2 cloves garlic, peeled and mashed into a paste
2 green onions, chopped, plus more for garnish
1/4 cup roughly chopped cilantro, plus more for garnish
Spiralized or shredded cucumber and carrot
16 oz package buckwheat soba noodles

Directions

Cook buckwheat soba noodles according to package directions; drain and set aside. Whisk together soy sauce, toasted sesame oil, rice wine vinegar, lime juice, orange juice, ginger, garlic, green onions and cilantro. Pour all but ½ cup of the dressing into a Ziplock bag with the sirloin steaks; seal bag and massage marinade into meat. Refrigerate at least 1 hour or up to 24 hours (the longer the better). Drizzle remaining dressing over the soba noodles, mix well and refrigerate.

Preheat grill to medium-high heat. Shake excess marinade from meat and grill about 5 minutes per side for medium-rare (7 minutes per side for well done). Allow meat to rest a few minutes, then slice diagonally and serve atop soba noodles with cucumber, carrots, and a sprinkling of cilantro and green onions.
